BIOL4015 Fermentation and Enzyme Technology (3 units)

This course aims to introduce the fundamental concepts of protein and enzyme study and industrial fermentation. The first part provides a solid foundation in protein structures and enzyme kinetics and mechanisms. Different strategies for proteins separation and purification and common practice of protein study will be introduced. The second part provides a solid foundation in the preparation, operation and industrial performance of fermentation.
